Sanpoutei Niigata Ramen offers a smoky flavor generated from the bonito broth and torched chashu. The soy sauce soup is rather light but expresses a depth of flavor. The egg is perfectly cooked alongside two large cuts of seaweed.
I also ordered the pork and raw egg bowl. The bowl had just the right amount of sauce, mixing with only the top portion of the white rice. The egg should be broken and enjoyed with every bite of this bowl.
For me Sanpoutei was an enjoyable experience. The complexity of the soup is definitely something hard to find in Singapore.
