Perched at the top of the Hilton is a poolside Italian restaurant named Il Cielo. The well priced two course menu ($25 SGD) seemed like the best choice for my appetite.
A carefully stacked Caprese salad was presented by the server. What I really liked about this Caprese was that instead of large blocks of mozzarella cheese and large cuts of tomatoes, there was a more precise touch. The final sprinkle of pesto and olive oil made the tomato taste very juicy and rich.
For my main course I ordered the pork belly with asparagus and mashed sweet potatoes. Many restaurants do not cook the pork belly to perfection, many times the texture is tough and not tender. However the chef did a great job as the fats on this pork belly seemed to be one with the meat.
Lastly, a sweet Biscotti was served with powdered sugar to bid us farewell on our way back to the tough reality of life outside of the dining room.
